  • 3 pounds Yukon Gold potatoes, cut into 1-inch pieces

  • 6 garlic cloves, minced

  • 1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

  • 1/3 cup olive or avocado oil

  • 2 teaspoons of Lift UP Custom Spice Blend or

- 1 tsp of garlic power

- 1 tsp onion powder

- 1 tsp smoked paprika

- 1 tsp of salt

-1 tsp of black pepper

-1 tsp of dried thyme leaves

  • 1/3 cup fresh parsley, minced

  • 1 teaspoon fine sea salt, more as desired

  • Freshly ground black pepper


Directions


Preheat your oven to 425ºF and prepare a baking sheet with parchment paper.

Cut the potatoes into 1-inch cubes. In a large bowl, whisk together olive oil, lemon juice, garlic, Lift UP Custom Spice Blend, parsley, salt, and pepper.


Toss the potatoes in the bowl, ensuring they are well coated with the zesty herb mixture.

Spread the potatoes on the baking sheet, ensuring they are spaced apart for even cooking.


Bake for 30 minutes, then flip the potatoes and continue baking for another 30 minutes until they are crisp and fork-tender.
